Triple Chocolate cookie recipe

3 oz unswettend chocolate
1 and 1/2 cups bittersweet chocolate chips
7 TBS unsalted butter

Put those three ingredients in a double boiler until the choclate and butter has fully melted. Then take the bowl off the heat and set it aside.

2tsp coffe powder
2tsp vanillia extract

Mix those two ingredients in a small bowl.

3 Large Eggs
1 cup sugar

Beat them in a mixing bowl fitted with a paddle attachment. Beat them on medium speed for about 4 minutes.

1/2 cup of all purpose flour
1/2 tsp baking powder
1/2 tsp salt

mix those in a bowl and use a wisk to get all the clumps out.


In the mixing bowl that has been mixing for 4 minutes add coffe mixture and beat for another 20 seconds. Then add the melted choloate mixture, making sure it is cool enough that it will not cook the eggs when you add it in. Turn the mixer back on for an additional 30 seconds. Take the bowl off the electric mixer and fold in the flour mixture. After you are done folding in the flour mixture add 1 and 1/2 cups semi-sweet chocolate chips and fold them in. Cover the bowl with seran wrap and let it sit for 30 minutes, so that it is hard enough to scoop. It will look like a brownie batter at this point, so don't worry, it will become hard enough to scoop out once it sits for 30 minutes.

Pre-heat the oven to 350 F. Line baking sheets with parchment paper and scoop out a heaping Tablespoon worth for each cookie. If you put two trays of cookies in at once, switch them half way through the baking. So bake for 10 to 12 minutes, and half way through put the cookies that are on the top shelf on the bottom shelf, and the cookies that were on the bottom shelf on the top. The cookies are supposed to come out gooey, because they will get harder once they rest. Leave them on the original baking sheet to cool, do not move them to a cooling rack. After about 30 minutes the cookies should have hardened up enough to move to the serving tray.
